Winter Wow

How is it coming with your Winter White Dinner Party planning?

What?! What?! You still are not yet inspired enough to send out the invites for this coming Saturday or Sunday!

If you live on the East Coast, this winter white blast of snow should have been more than enough inspiration. That, and the fact  that by Saturday you will have serious cabin fever and need some friends to come around to relieve you from the 5th cleaning of your sock drawer lol!

Cocktail – Chilled Prosecco

Starter – Asian Spiced Scallop Lollipops

Entree – Atlantic Cod with fresh Basil, Cippolini Onions, Oyster & Bonnet Mushrooms in a coconut milk, white wine, masala fish spice mix – served with Quinoa and fresh lemon.

    Sure Lauri! It could not be easier or quicker! Buy large sea scallops, rinse and pat dry.
    In a small bowl mix 1 tsp each of red chili powder, tumeric, garlic salt, and ground ginger. Add 1/2 Cup of panko breadcrumbs. Mix spices into panko.
    Rub scallops with a bit of olive oil and then dip into panko, getting a good coating on all sides. Place on a dish.
    Heat 1/2 cup of olive oil in a saute pan til sizzling. Add the scallops and cook 1 min on each side. Remove and place on a clean dish. Insert a small appetizer skewer lengthwise through the scallop.
    In a saute pan heat 1 cup wine and 1 tbsp. mustard with some fresh salt & pepper. Cook until it thikens about 1 minute. Drizzle over your crispy scallops and eat!
